EGGS DRAMA

I love eggs. However they come, any time of day. So when I lovingly say to my 10 month old, Teddy, "Here you go, sweetheart, have some free range scrambled egg with lightly toasted sourdough and crushed organic avocado which was £2 from Waitrose," and he screws up his face, spits the first mouthful out and throws the rest to the dog, I am rendered less than eggstatic.

But, you know, I grew up in South London, so I'm naturally a fighter. I don't go around letting 10 month old babies lay down egg related rules in my house. So I persevere and today I gave it a go with these courgette, pea and chard muffin frittatas.

They were quick to make while Teddy applied his attention span to slobbering over an empty egg box.

Fry up some grated courgette, shallots, peas and if, like me, you bought a big bag of chard from that market in Kingston because it was only a quid and now it's in every meal until it's gone, chard. (Basically, any veg.)

Beat 4 eggs and add in some chopped herbs, fresh or dried, whatever you've got, and a bit of black pepper.

Mix the egg mixture with the veg and throw in a bit of grated cheese, I used feta, but again, whatever you've got!

Pour the mixture into a buttered muffin tin and bake at 180 for 25 minutes.

Eat two yourself with salt and sriracha.

Think of yourself as a mumboss.

Feed to ungrateful but still cute baby.
