POPEYE TOAST

Babies lull you into a false sense of security for the first few months. You put them in one spot, make a cup of tea, they're still in the same spot. OK, maybe your tea goes cold whilst feeding them, but movement wise, they're pretty hassle free. Then they start to roll, so floor only. Then they start to crawl and all of a sudden there is nothing in your house from the waist down except garish plastic toys. You have to safety lock all your drawers and cupboards, so that even the adults can barely get into them without swearing, and spend your time running round after them, protecting them from harmful toilet lids/dog bowls/stairs.

With this in mind, you'd be forgiven for thinking me slightly unhinged for giving my 11 month old darling Tasmanian Devil a breakfast with so much iron and protein in it that it is likely to triple his energy levels for the entire. day. He's hard enough work. But you have to try this breakfast regardless, Teddy loved it.

Inspired by a recipe in Jamie Oliver's Family Superfoods, I adapted it to make it baby friendly, vegetarian and easy.

Whizz up an egg with a couple of handfuls of spinach in the food processor.

Grill a slice of wholemeal bread on one side, and spread the spinach egg over the other side.

Sprinkle with some cheese (Jamie uses feta, I used cheddar for lower salt content as there is already salt in the bread) and grill for a minute or two until the egg is cooked and the cheese is all bubbly and delicious.

Slice however you like and serve to hungry mini Popeye!
