CORN CAKE KARMA

Good things come to those that read my blog via Instagram! They get a say in what recipes they want! I normally post every Wednesday but this is a cheeky extra seeing as its raining outside, the dog is walked, washed and dried and Teddy is asleep, especially for Nick, Terri and Luella. Let me know how they turn out!

I had all of the ingredients in my cupboard, and they took all of 5 minutes to make, blow on and serve up to an eager Teddy and myself.

Easy to remember what's in them, too: 100g sweetcorn, 100g polenta, 100ml milk, 1 egg, 1 pinch of baking powder.

Throw all of the above into the food processor with wanton abandon. Pulse to your desired consistency of corn - Teddy and I have ours chunky with some whole corn kernels.

Heat some oil or butter in a pan and fry a dollop of the mixture, turning after a minute or so, so that the pancake is crispy and golden on each side.

Serve with a dollop of whatever you have in the fridge by way of sour cream, yoghurt or crème fraiche, and some chopped tomatoes and avocados and a squeeze of lime juice. If you have any coriander, sprinkle that on too, baby can always try it and practice those fine motor skills to pick it off if they don't like it!

Add some chilli and salt flakes to your own little quality control portion and enjoy together!

I would make these for my family and friends, regardless of Teddy, they are so delicious! And completely gluten free for anyone with intolerances. YUM.
