JUST IN QUES-ADILLA

Dom and I had some friends over for dinner the other day. It was a cold autumnal night and there were about 8 of us, so really there was only one option. (The only option I gave myself being an excuse to cook one of my favourite meals and something that involves little prep whilst nearly 1 year old helps by banging wooden spoon on empty saucepan.) A warming 10 spice chocolate chilli.
The recipe I base mine on is by Sarah Britton in My New Roots - I made her vegan version and a beef version, leaving out the sweet potatoes and corn.) Inspired by Gizzi Erskine again, I served it in little bowls made of tortilla (spray a tortilla with olive oil, put into an oven proof bowl and bake for a couple of minutes so it crisps up. Does not replace actual bowl though - you need a bowl for the bowl......)
So just in 'ques' you have some chilli leftovers like I did, a delicious option is to make some quesadillas for your little one as they are more pick-up-able than a bowl of chilli, so great for leaving them to it while you eat your own!

All I did was spread some chilli over half a tortilla, grate over some cheese, fold the tortilla in half and put in a dry frying pan for a minute or so on each side. Slice up and serve with some sour cream or yoghurt and some tomatoes and avocado.
