SWEET LUNCH IDEA

Familiar scene: you, your baby, 7 bags and a buggy pile into the house through the front door. You shake off your coat and turn on the light/heating with your chin. Lunchtime or tea time has sprung upon you. You go to the fridge, nothing there but some grapes, a babybel and half a bottle of wine. It crosses your mind to serve your baby just that, minus the wine. Which you're tempted to have yourself.
Before you do that. I guarantee you have a slap up lunch or tea for you and your baby just waiting to be assembled. Do you have a tin of sweet corn at the back of the cupboard? Or a bag of peas in the freezer? An egg? A bag of flour? Do you have 5 minutes to spare before the crying starts?
Ok, then you have lunch!
Put a heaped tablespoon of flour into your food processor with the drained tin of sweet corn or handful of frozen peas and the egg. Add half a teaspoon of baking powder for fluffiness.
If you have a spring onion, put that in too!
Whizz up, keeping it as chunky as you like and dollop a spoonful of the batter into a pan with a drizzle of oil or butter and fry for 2 mins on each side until golden.
Serve with said grapes and babybel and there you have it! Teddy loves these fritters (see proof below) and so do I.
